Heathvale Vineyard Eden Valley Shiraz

Vineyard: The Shiraz vineyard is a collection of old and new vines grafted to Chardonnay. The trellis structure is known as VSP (vertical shoot positioning) which opens the vine canopy to direct sunlight allowing the grapes to capture all elements to assist with consistent seasonal development.

Season: Spring began dry and led into a very mild, dry summer with no disease pressure. This resulted in fruit with high natural acidity and incredible concentration. Summer began with dry, hot and windy weather which relief came with 60-75mm of rain leading to  a record-breaking cool January. The rain was perfectly timed for the old dry-grown vineyards, and the mild weather that followed from February through to April provided for a fairy tale vintage.

Wine making: The grapes are handpicked, de-stemmed and cold soaked prior to open fermentation under controlled cool temperature. Basket pressing allows gentle control over the extraction of the fruit. Matured in French oak barrels.

Appearance:  Crimson red

Aroma/Bouquet: Vibrant aromas of blackberry and macerated dark cherry berry fruits with lighter tones of fragrant mulberry. Concentrated aromas are underscored by hints of Asian five spice, liquorice, black pepper, and French oak nuances.

Palate: The Shiraz is generous, expressive and mouth-filling. Deep resonant fruits of plum, black cherry, berries and fragrant high-tones of mulberry and cranberry. Hints of black liquorice, anise and French oak. The wine is generous with concentrated fruit which retains its line of acidity and clarity.  Ripe savoury tannins  line the palate which finish with Eden Valley elegance.

Food Pairing: Slow braised Lamb shanks, Rib Eye fillet with a red wine jus or any hearty full flavoured cuisine.
